Body - 1/3 yellow floss or uni stretch; 2/3 peacock herl

Cheeks - Jungle cock

Throat - Yellow hen hackle fibers

Author's Note

Tony Couture, from Pabos in the Gaspé Peninsula, has been fishing for Atlantic salmon for several years. The Restaurée, one of his latest creations, proved surprisingly effective in the Grand Pabos West. Although conventional fishing methods can be used successfully, Couture takes a different approach. He casts his fly upstream and lets it drift with the current, adjusting the line position during the drift. The fly thus presents itself differently, and the wing, fluttering in the water's movement, gives it a distinctive appearance.
